Hungry Girl

I admit, I am kind of a healthy cook. It can be annoying sometimes. But, I love to bake so it's good that every once in awhile I try to bake something somewhat good for you. Lance always says I am trying to fatten him up because I bake so much.

So, for Mother's Day, I asked for the Hungry Girl cookbook and now it's my favorite thing this week. I had seen it and heard a lot of really good things about it so I wanted to check it out for myself. And the verdict...it's awesome! It's nice because the recipes are original, easy and healthy. Some of them are a bit odd, but I don't use cookbooks all that much so the fact that I have made quite a few things from this already is really saying something. And it has a lot of real pictures of the food. I love that.

So be a hungry girl...or boy, and eat up!

It's lookin' like Summer!

Since it's Memorial Day weekend and we're kickin' off the summer, I thought my favorite thing should be something you all need when you are eating your corn on the cob at your BBQ's this season.

It's the corn zipper!!
I love corn on the cob, but am not the biggest fan of eating it and having corn stuck in my teeth. So, Sheila turned me on to this little puppy and I love it! We have eaten a lot of corn on the cob these past few weeks and I am always so excited to use the corn zipper. It's the little things :) Even Lance, who likes to eat it off the cob, uses this every once in awhile. It's just so slick. There is a jagged blade on one side, you run it down the corn and it easily cuts the corn off in rows. And really, it's way more fun to eat corn in rows! I know you're thinking "Or I could just use a knife". No, you're wrong. You need this. Enough said.

PiNK pARtY

Okay, so Sarah's birthday was in February, but I am a complete slacker so I'm just getting around to posting it. But, she hasn't posted about it either yet so I am ahead of her :P

Since it was a big Birthday (I can't post her age), we decided a surprise party was in order. We did it at my dad's house and it was fabulous. T helped us plan it and came up with the idea we needed a theme. Then came up with the idea that the theme should be PINK!! Love it.


Karen did a wonderful job with the decorations. I just did the streamers, balloons and pink signs. The creativity was all her!
I did make pink bread though to go with the spinach dip. T brought Salmon and it was really, really good, Karen made pink fruit dip, grapes in jell-o, and pink punch.
This is her walking in the door. I think she was surprised.
Even Zacher wore his pink. I love this kid.

I made this great cake. Half chocolate, half cherry chip...her favorite.

To all the Wonderful Mother's out there... you know who you are

Of all the holidays that we celebrate throughout the year, perhaps none are more deserving than mother's day. For without all the sacrifices that you mom's, and mother figures, make we would not have the opportunity to be in this wonderful world of ours.

For me mothers day has such a special meaning. For I was not able to celebrate many mothers days with the most wonderful mother on this earth as my mother passed away when I was eight. But for those eight years my mom helped develop me into the person who I am today and I am so greatful to have had her in my life for those eight years.

Unfortunately children all too often take for granted all of the wonderful things that mothers do for them and they don't take the opportunity to cherish the love that a mother gives to them. But I see in my wife all of the beautiful things that mothers provide to their children, and I hope some day she has children that appreciate what a wonderful person she is.

Friday's Favorite

Volleyball has begun again...and I have the bruises to prove it!
I am so excited though because I have missed playing and that's why it's my favorite thing Friday this week. I love Volleyball.

We took a break after the winter league because Lance had his knee surgery. Since we're showing nasty pictures, let's take a look at those...

This is a week or so after...still very nasty.

His bruises are a little more impressive than mine.
The past month or so we've gradually been getting back into playing if there's an open court at the gym or Tuesday nights at the church, but that's nothing like a league.

So, now he's completely back playing and better than ever. And the best part, no knee pain! We are playing with a couple of different players we met when we played at the church a couple weeks ago. It looks like it's going to be a fun team. It's so good to be playing again...I don't even mind the pain!

Happy Anniversary!

A year ago today we were in Jamaica enjoying the beach. There was no stress of planning, flowers, or cakes, we were just enjoying the Island.

I went to get my hair done at the salon as Lance hung out on the beach with Rick and Mike. Before I came back, he had gotten ready for the ceremony and went to the wedding office. I went back to the room, got my dress on and the wedding coordinator showed up with my boquet. Did I mention, NO stress at all? We walked to the beach where the ceremony was about to begin.
It was a beautiful day and a beautiful ceremony which I cried almost the entire way through. We then had a small celebration with the cake, a toast and some yummy food. Then we walked around the beach and took pictures. In one word, it was perfect.
After that we had a wedding dinner on the beach where the wait staff even sang to us. We arrived back in our room to find towel swans with my boquet and a menu for breakfast in bed the next morning. Did I mention it was perfect? It truely was.

And being married to Lance has been just as wonderful! Marriage isn't always easy, but there's no one else I'd rather be with than him. Here's to 100 more years :) I love you babe! Oh, and we're headed back to Jamaica for our 10th anniversary so mark you calendars now...we want you all there :P

My all time fAvORitE!

I know it's cheesy, but my favorite thing this Friday is Lance :) Tomorrow is our anniversary so it seemed very appropriate. And really, we all know I am a complete cheese ball anyway.

Lance is the sweetest, funniest, kindest, most wonderful person I have ever met. He is so good to me, loves to surprise me and make me happy, he's an excellent father and oh yeah, he's hot :P So, in honor of all that, I have posted some of my favorite pictures.

He recently made a Christmas DVD for his dad and siblings with all their old Christmas pictures and videos. So all the young pictures I have are from Christmas.
Isn't he adorable?! He is the older one.

And, he's a Ute fan. What more could I ask for?!
Hannah absolutely ADORES Lance. Whenever she's here the first thing she does is start looking around, then asks "where's Lance?". Last time she was here, he was downstairs when she asked so I let her open the door to the basement and call down to him. When he answered she said "can I have you?". He immediately came up the stairs and picked her up. It's sooooo cute!
